Shorbit el Ema – Lebanese Rice and Noodle Soup with Kafta Meatballs
This comfort soup is delicious , easy to prepare and kids love it!

INGREDIENTS
For the kafta meatballs
- 1/2 Kg of fresh ground beef or lamb (or half and half).
- 1 small onion finely diced
- 1/2 cup of fresh chopped parsley
- 1/4 teaspoon of allspice
- 1/2 teaspoon of salt
- vegetable oil for frying
For the soup
- 1/2 cup of rice, rinsed.
- 1/2 cup of soup noodles (or Vermicelli)
- 2 tablespoons of vegetable oil
- 1 tablespoon of tomato paste, dissolved in 1/2 cup of water or one cup of canned crushed tomatoes.( You can use fresh too).

COOKING METHOD
For the meatballs
Mix all the ingredients together, except the vegetable oil. Knead well. Process this mixture called Kafta, in a food processor until well combined.
Shape the kafta into small sized meatballs.
For the soup
In a deep skillet, heat vegetable oil and fry the kafta balls until they start turning brown. Reserve.
In a saucepan, bring to a boil 1 liter of water. Add in the fried kafta meatballs, tomato paste (or crushed tomatoes), and rice. Cook until the rice is done, Add the noodles and cook until they are al dente. Salt to taste.
Serve hot.
