9133sfufSfoof – Lebanese Semolina Cake with Turmeric! (no eggs)

Sfoof, is a semolina cake flavored with aniseed and turmeric spice (Curcuma). This no egg lebanese cake is delicious and healthy, a good alternative for Vegans. The yellow color of the cake comes from the addition of turmeric. Turmeric has been a staple in Middle Eastern and Southeast Asian cooking for thousands of years. Some of turmeric’s most ardent followers credit it with antiseptic and antibacterial qualities, anti-inflammatory properties, slowing the progression of multiple sclerosis and preventing or even curing cancer. So go ahead and enjoy this easy to make cake!

Turmeric_main_0127Ingredients

  • 2 cups of semolina flour
  • 1 ½ cup of all-purpose flour
  • 1 cup of vegetable oil
  • 1 tsp of Turmeric
  • 1 tsp of baking powder
  • 1 tsp of ground aniseed
  • 1 ½ cups of sugar (or  the equivalent in stevia)
  • 1 ½ cups of cold water
  • Sesame seeds, Slivered almonds or Pine nuts, for garnish

Preparation

Preheat the oven to 350ºF

Mix together the dry ingredients except the sugar (or stevia). Add the oil and stir to make a paste.

In a separate bowl, melt the sugar or the stevia in the water. Add gradually to the flour and spices paste and mix using an electric cake mixer.

Pour this mixture in a greased baking dish. Flatten with a spoon. Sprinkle with sesame, pine nuts or decorate with almonds.

Bake until golden-brown for approximately 30 minutes .  When cool, cut in square pieces. Enjoy!
