Kebbeh Nayyeh

Kebbeh nayyeh – Beef or lamb tartare
Kebbeh nayyeh or raw kebbeh is a traditional lebanese meza.
It consists of minced raw lamb or beef mixed with fine bulghur. Kibbeh nayyeh is often served with mint leaves, olive oil and raw onions and is eaten with pita bread.
This delicious dish has a unique versatility in that any leftovers are cooked, creating a different dish.

Ingredients
- 1 pound of very fresh extra finely ground lamb or round beef
- 1 cup of bulghur
- 1 medium white onion finely minced
- 2 tablespoons of fresh mint minced
- salt and pepper to taste
- a few ice cubes
Preparation
Mix all ingredients together, preferably in a food processor. Serve immediately. Drizzle heavily with olive oil and serve with onions cut in quarters, fresh mint leaves and pita bread.
If there are any leftovers, shape into little flat cakes and cook in the oven on an aluminium sheet. Cooked, these patties can be eaten with plain yogurt or a salad.
