Okra is a vegetable that has many health benefits and is known mostly for it’s high vitamin C, vitamin K and folate content. It is usually found frozen in most lebanese groceries but you can also find it fresh if you are lucky enough!
Lebanese prefer the short kind and I personally think it tastes better than the long one.
Bemye b Zeyt is a vegan lebanese version of bemye w rez ( with meat and rice) and it can be eaten cold as well as hot. It’s always better to enjoy it with pita bread.

Ingredients

-800 g of  frozen or fresh okra
-3 medium size onions, chopped
-1 bunch of cilantro, chopped
-6 garlic cloves finely minced
-1 can of diced tomatoes or the equivalent of fresh tomatoes
-extra virgin olive oil to taste
-sea salt to taste
-juice of 1 lemon
-1/2 cup of water

Preparation

Heat olive oil in a wide pot,  fry frozen or fresh okra on medium to high  heat until golden. Set aside on absorbent paper.

Fry onions until golden, add half of the garlic and half of the cilantro. Toss for about 2 minutes. Add the fried okra and  toss every now and then.

Add tomatoes,salt and water. Bring to a boil and let  simmer for about 30 minutes or until sauce is thick and okra is tender and well cooked. Add the lemon juice, the rest of the garlic and the cilantro. Adjust salt to taste.

Serve with pita bread!
